I have already shared carrot halwa using sugar. But I thought to share today's healthier version where I replace sugar with jaggery. I and my daughter eat a lot of desserts, I try to make them healthier wherever possible 😊
Jaggery has many health benefits. One of them is it helps to boost immunity. Is it not the right time to replace sugar with jaggery in our daily routine?

I have used liquid jaggery / liquid molasses which we get in our native (coastal areas of Karnataka). You will get online too. But I m not sure about the quality and it's overpriced. I never ordered online. Always got it from my hometown. If you are in Bangalore, you might get it in Mangalore stores. You can use good quality powdered jaggery as well...

Carrot halwa is a famous Indian dessert made mainly with carrot and milk and sweetened with sugar or jaggery.
Serves: 3-4

Ingredients:
2 Cup Grated Carrot
2 Cup Milk
3/4 Cup Liquid / Powdered Jaggery
2 Tbsp Ghee
1/4 tsp Cardomom Powder
3 Tbsp Dry Fruits(thinly Chopped almonds, Cashews, and Raisins)
Cashews, Almonds, and Raisins to garnish

Directions:
1. Grate the Carrots after Rinsing and Peeling.
2. Heat Ghee in a heavy-bottomed pan, roast the dry fruits which will be used for garnish. keep aside.
3. Add Carrot to the same pan and roast for 15 seconds.
4. Add milk and bring it to boil. Then simmer it and allow carrot to cook.
5. Keep Stirring in between so that milk won't get burnt.
6. Once the milk completely evaporates, add cardamom powder and jaggery.
7. Keep stirring till the jaggery dissolves and the mixture starts leaving the Pan.
8. Add the dry fruits and mix well and switch off once the mixture thickens and comes together.
9. Garnish with roasted dry fruits(from step 2). Serve warm or cold.

Notes:
1. Add Jaggery once Milk evaporates, otherwise, there is a chance of milk curdling.
